Declaration Gin, 70 cl

A bright, intriguing and complex nose. You’ll find juniper’s influence with crafted spice from the trio of botanicals: English liquorice; Australian ginger and Indian Darjeeling Tea These, along with Cardamom, make up the main influences and help to create a complex but refreshing Gin.

Tasted with a tonic, a subtle juniper and liquorice sweetness is quickly cut through with clean green cardamom and a ginger note to avail and change on the palate.

The liquid itself is created at the wonderfully placed Welsh Wind Distillery (it overlooks Cardigan Bay) where the team are well adversed in creating spirits of great character- their Gin making experience is worth the trip alone.
